My neighbors just got home from their mission to Denmark. I offered to bring some goodies to their open house last Sunday. I made my tried and true Pumpkin Squares. They are easy, make a lot and everyone seems to love them. You can also pretend that they are "healthy" because there is pumpkin in them! Several of my fellow bloggers asked for the recipe so here it is:
PUMPKIN SQUARES
4 eggs
2 tsp. baking powder
1-2/3 c. sugar
2 tsp. cinnamon
1 c. oil 1 tsp. salt
2 c. flour
1 tsp. soda
2 c. pumpkin (16 oz. can)
Beat eggs, sugar, oil and pumpkin until light and fluffy. Stir together remaining ingredients and add to pumpkin mixture. Pour into greased pans (two 9x13 or one 15x10x1) Bake at 350 for 20-25 min. Frost
CREAM CHEESE FROSTING
8 oz. cream cheese
1 c. margarine
2 tsp. vanilla
5 c. powdered sugar
Cream all ingredients together.
Note: I always use one large can of pumpkin and make the recipe twice using 1/2 can in each batch. Making one batch of frosting is enough for 2 recipes of the pumpkin squares. ENJOY!

I got the pecan bars up on my blog for you. Hope you enjoy them. I doubled it for a cookie sheet for the 'special event'. Glad you liked them.
